1- weigh the rice, wash it and soak it for 30 minutes
2- put the oil and the unprocessed spices in a pot and sauté
3- add the garlic, ginger and onion and continue to sauté then add the chicken, ground spices, tomato, tomato paste and salt then stir
4- add yogurt and continue stirring until they come to boil
5- add coriander, mint and water, let to boil so the chicken is cooked
6- boil rice in a different pot to almost fully cooked and strain it
7- add rice to the chicken and stir gently so the rice goes to the bottom of the pot, then add the mixture of rose water and food color powder evenly
(You may add half of the rice portion in a separate pot and add the chicken mixture on top and then add the other half. You then can proceed to the next step below.) *optional
8- garnish with fried onion and toasted nuts and let to cook for about 20 minutes, then take the pot off the heat and serve
