Humus with Basil and Roasted Eggplant

Ingredients

  • 1.1/4 cup chick peas - boiled chickpeas
  • 2 tbsp. tahini
  • 2 tbsp. yogurt
  • 1/2 lemon juice
  • 1/2 cup fresh basil - chopped
  • 1 tsp. Mint - chopped
  • salt
  • 3 tbsp. olive oil
  • 1/2 eggplant
  • salt
  • black pepper
  • 3 tbsp. olive oil

Preparation

1- mix all the ingredients  together (Humus, Tahenh, yogurt, lemon juice, Basil, Mint and olives oil.

2- Using 190C- 200C  oven, roasted the Eggplant for 20 minute.

3- For serving, start with hums followed by Eggplant followed by olives oil then roasted pine followed by pomegranate followed by roasted bread then pomegranate molasses and  Tahenh
