Ingredients

Ingredients

  • 1 Kilo eggplant - Medium Size
  • 4 tbsp. vegetable oil

Stuffing

  • 300 g Minced Meat
  • 2 Spoon olive oil
  • 1 head onion - Chopped

Spices

  • 1/2 tsp. Garlic powder
  • 1/2 tsp. ginger
  • 1/2 tsp. black pepper
  • 1/2 tsp. Chili Pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. Caraway
  • 1/2 tsp. salt

Remaining Ingredients

  • 4 potatoe - sliced
  • 2 sweet pepper - sliced
  • 1 cup tomatoes sauce - cooked
  • 1 cup Mozzarella Cheese - grated
  • Parsley

Preparation

1- Peel the eggplant then make a deep crack in the middle of it.

2- Heat up some oil in a pan then fry the eggplant in it for a while

3- Cover the pan and cook the eggplant on a low heat until it gets well cooked

4- In a frying pan, fry onion in oil then add meat

5- Cook the meat until its color gets changed. Add herbs and mix it all and Cook it for 15 minutes

6- In the tray, Assemble potatoes and sweet pepper

7- Add tomatoes sauce

8- Stuff the eggplant then place it in the tray

9- add some cheese the bake it in 180 C oven for 20 minutes
