  • 1 Kilo Meat with Bones
  • 3-4 cups rice - soaked

ADLA spices

  • 2 stick cinnamon
  • 7 cardamom
  • 3 leaves Bay Laurel Leaves
  • salt
  • 1/2 tsp. mastic
  • Chili Pepper
  • cold water

For meat seasoning

  • pinch of saffron - brewed in 2 tbsp. hot water
  • 1 tbsp. mustard
  • 1 tsp. Tomato paste
  • 2 tbsp. Butter
  • 2 tbsp. Ketchup
  • 2 tbsp. rose water
  • 1 tsp. Turmeric Powder
  • pinch of black pepper
  • pinch of salt
  • 1/4 cup meat stew
  • 2 Spoon vegetable oil

Preparation

1- Add the meat with the recommended  Herbs, mastic,  and cold water in pressure- pan for 40 minutes. 
2- Mix the meat seasoning herbs with meat stew 
3- Add the strained meat stew, salt, pepper to the rice then cook it for 10 minutes. 
4- Add safran then cover the rice with a piece of foil that has holes in it. Assemble the meat and seasoning on the foil layer.

5- Place a small bowl in the middle of the meat, put an ember then Pour 2 tsp. oil on it then cover the pan so the food gets the smoke flavor.
